Miso Pear and Shiitake Salad

1 cup fresh shiitake mushrooms, stems removed and quartered
2 tablespoons toasted sesame oil
1 tablespoon sesame seeds
1 d’anjou pear, cored and sliced with a mandolin
1 cayenne chili pepper, minced, deveined and deseeded
2 cups arugula 
1/3 cup Red Shell Sesame Soy Dressing

Roast shiitake mushrooms at 350 degrees for about 20 minutes with some olive oil, salt and pepper. Remove from oven and allow to cool. Bring down the temperature of your oven to 275.
Roast pears at 275 degrees for about 5-7 minutes with a touch of olive oil, salt and pepper, or until crispy on sides and soft in the center. Remove from oven and allow to cool.
Start to build your salad by tossing all the ingredients together with your Red Shell Sesame Soy Dressing and serve immediately!
